Apple Brown Betty *Casey Allen 3 pounds Granny Smith apples 4 cups of bread cubes 1/2 tsp. ground cinnamon 1/4 tsp. ground nutmeg 1/4 tsp ground allspice 1/8 tsp. salt 3/4 cup brown sugar, packed 1/2 cup melted butter Wash apples, peel, core, cut into eighths. You should have about 7 to 8 cups of sliced apples. Place apple slices in bottom of lightly greased Dutch Oven. Combine bread cubes with cinnamon, nutmeg, allspice, salt, sugar, butter; toss together. Place on top of apples in oven. Bake 300 for 2 1/2 hours. Banana Bread & Cookies *Evelyn Cahoon 1/2 cup butter 1 cup sugar 2 eggs 1 cup mashed bananas 1/4 cup milk 1 teaspoon lemon juice 2 cups flour 1 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1/2 cup chopped nuts (optional) Cream butter and sugar. Add eggs and beat. Add bananas, milk, and lemon juice. Sift dry ingredients and add. Add nuts. Bake in Dutch Oven for 1 hour 12 coals bottom 15 top (350 degrees.) For cookies: Add 1 Tbsp cinnamon to the dry ingredients & add a bag of chocolate chips . Place in bottom of Dutch Oven and cook for 10-12 minutes. Best Ever Chocolate Chip Cookies 1 Pound Butter 2 Eggs 2 Tsp. Vanilla 1 Tsp. Almond Extract 1 1/2 Cups Granulated Sugar 1 1/2 Cups Brown Sugar 1 Tsp. Baking Powder 1 1/2 Tsp. Baking Soda 1 Tsp. Salt 5 Cups Flour 1 Bag Chocolate Chips Cream butter, eggs, vanilla, and Almond extract. Sift dry ingredients together, then mix with egg/butter mixture. Add the chocolate chips. Shape into 1 inch balls, place in lightly greased Dutch Oven 1 in. Apart. Bake 10-11 Min. 375 degrees. Butterscotch Apple Pie *Jill Woods 7 cups golden delicious apples, peeled and sliced 1 ½ cup brown sugar 2/3 cup water 1 Tbsp lemon juice 3 rounded Tbsp flour ¼ cup sugar 1 tsp vanilla 1 tsp cinnamon 3 Tbsp butter (can’t be margarine) 1 unbaked pie crust Put Apples, brown sugar, water and Lemon Juice in Dutch Oven and bring to a boil (12 coals on bottom) Boil for 10 Minutes, then take out Apples. Mix Flour and sugar to juice mixture, mix until completely dissolved. Remove from heat and add vanilla, Cinnamon and Butter. Put apples back in and pour into unbaked pie crust, put leftover doe in strips across top. Cook for 10 minutes 15 bottom, 18 top (425) then lower heat to 12 coals bottom, 15 top (350) and cook for 25 minutes. Caramel and Oats Cookie Bars *Amber Allen 1 pkg Refrigerated Chocolate chip cookies 1 cup quick-cooking Oatmeal 1/4 tsp Salt 3/4 Cup Caramel Ice cream topping 5 TBSP all purpose flour 1 tsp Vanilla 1 Cup Semi-Sweet Chocolate Chips 3/4 cups chopped walnuts-optional Mix Cookie dough, oatmeal and salt. Reserve 1/2 cup dough for topping. Press remaining mixture into bottom of lightly greased 10in Dutch Oven. Bake 10-12 min (350 degrees) until dough puffs and appears dry. In seperate bowl mix caramel, flour and vanilla. Sprinkle walnuts and chocolate chips evenly over crust. Pour Caramel mixture evenly over top. Crumble reserved dough mixture over caramel. Bake 20-25 min longer until golden brown. Cool for about an hour before serving. Chocolate Pecan Pie *Crystal Lemon 4 - 1 l/2 Oz Squares Unsweetened Chocolate 4 Tablespoons butter 2 Eggs ¼ Cup Milk 1 Teaspoon Vanilla 2 Cups Packed Brown Sugar 3oz Semisweet Chocolate Morsels or Chunks 1 Teaspoon Salt 3 Tablespoons Flour 1 Unbaked pie shell Pecans chopped Melt chocolate and butter together. Add eggs, sugar, vanilla, salt, and flour; mix until well-blended. Spread pecans over bottom of unbaked pie shell. Sprinkle semisweet morsels or chunks over pecans. Pour filling on top. Place Pie tin in bottom of Dutch Oven Bake 35-40 minutes 375 degrees. Serve warm or chilled. Peach Cream Cheese Pie 3rd Quarter First Prize Recipe Winner *Rink Somerday Pie Crust 2 c sifted flour 1 c shortening 1/2 tsp salt 1 medium egg 1/4 c water Pie 1 1/2 8 oz pkgs of cream cheese 1 1/2 c sugar 1 can peaches - drained and diced 2 tbs corn starch all spice Directions: Pie Crust Mix shortening, salt, and flour with fork or pastry blender until large chunks form. Mix egg and water together and pour a little into flour mixture a little at a time. Mix until dough is moist. Be careful not to overwork dough. Set aside small portion for lattice work on top of pie. Roll out remaining dough for an 8" Dutch oven. The dough should be more than halfway up the sides of the Dutch oven. Pie: Mix cream cheese, sugar, and cornstarch until creamy. Gently fold in peaches. Spoon mixture into pie crust. Place dough lattice on top of pie. Turn down edges of crust toward center of pie. Add a couple of dashes of all spice on top of pie. Bake 350 for 1 - 1 1/2 hours or until crust is golden brown and filling is bubbly. Let set and cool. Peach Crisp *Evelyn Cahoon 6 cups peaches (sliced and peeled) 1 cup sugar ½ cup butter ¼ tsp salt ¾ cup flour 1 tsp cinnamon Mix sugar, butter, salt, flour & cinnamon to a crumb mixture. Put peaches on the bottom of Dutch Oven, top with crumb mixture. Bake for 45 minutes (350 degrees) Popcorn *Deanna Holland 2 Tbsp Oil 1 Cup Popcorn Salt to taste Pour oil in Bottom of 12in Dutch Oven. Pour Popcorn in Dutch oven. Put lid on and place over direct heat apx. 12 coals. Heat until kernels are all popped. Pour Salt on popcorn and enjoy. Sour Cherry Cookies 2 Cups Sugar 3 Eggs 1 Tbsp Almond Flavoring 2 tsp Baking Soda 1 Cup Nuts 1 Cup Butter 5 Tbsp Cherry Juice 1 Can Sour cherries 4-5 Cups Whole Wheat Flour Cream together sugar, butter, eggs, cherry juice and extract. Stir together flour and soda. Add to creamed mixture and blend well. Stir in Cherries and nuts. Drop by spoonful into oiled Dutch Oven. Bake 350 Degrees for 15 min. Yorkshire Pudding 2 ½ cups flour 2 ½ cups milk 1 tsp. salt 3 eggs 2 tsp. oil Mix flour and milk. Add salt and mix. Gently stir in eggs, not mixing completely. Let chill for at least 30 minutes. Spread oil in Dutch Oven. Pour in batter and bake for 30 minutes, at 450°. Remove coals to about 350° and bake for another 10 minutes. Yummy Chocolate Chip Cookies *Allyson Allen 1 Lb Butter 2 Eggs 2 tsp Vanilla 1 tsp Almond Extract 1 ½ cups Granulated Sugar 1 ½ Cups Brown Sugar 1 tsp Baking Powder 1 ½ tsp Baking Soda 1 tsp Salt 5 Cups Flour 1 ½ cups (12 oz) Semi Sweet Chocolate Chips Cream Butter, eggs, Vanilla and Almond together in a bowl. Mix in remaining ingredients mix until well mixed. Shape into 1 inch balls and place in greased Dutch Oven 1 inch apart. Bake 375 for 10-11 min.
